Practical DIY No 11: Kitchen Recipes

If you aren’t using the back of cabinets for secret storage and organization, you’re missing out. I started taping my favorite recipes on the backs of my kitchen cabinets years ago and although I now know most of the recipes that I have on display, my daughter has begun to follow them. She loves to cook and every now and then, she’ll be quiet in the kitchen working on something creative to bake in the oven. Our most often used recipe is my Christmas morning muffins.

Christmas Morning Muffins

Preheat Oven to 400 degrees

1 cup White Flour
1/2 cup Wheat Flour
3/4 cup sugar (I usually do a little less)
1/2 tsp kosher salt
2 tsp baking powder
1/3 cup of butter plus oil (I fill up 1/3 cup with chunks of butter and then pour in oil to seep into the butter)
1 egg
1/3-1/2 cup of milk
1 1/2 tsp vanilla
3/4 cup of blueberries (we sometimes sub strawberries)

Combine dry ingredients together separately from combined wet ingredients, then combine the dry and wet together.

Fill 8 lined muffin tins and (if using a dozen pan) fill empty pan cups with 2 tsp of water each. Sprinkle sugar on top and bake for 15-20 minutes at 400 degrees.
